Healthy Protein Muffins (Easy Recipe!)

These easy protein muffins are packed with nutrients, soft and fluffy, and perfect for breakfast or post-workout fuel.

Ingredients

Scale

1 cup oat flour

1/2 cup vanilla protein powder

1/2 tsp baking soda

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

2 eggs

1/2 cup Greek yogurt

1/4 cup unsweetened applesauce

1/3 cup maple syrup

1 tsp vanilla extract

1/2 cup almond milk

Optional: 1/2 cup blueberries or chocolate chips

Instructions

1. Preheat oven to 350°F and line a muffin tin with liners.

2. Mix oat flour, protein powder, baking soda, baking powder, cinnamon, and salt.

3. In another bowl, whisk eggs, yogurt, applesauce, syrup, vanilla, and milk.

4. Fold dry mix into wet mix just until combined.

5. Add any optional mix-ins like blueberries.

6. Spoon batter into liners, filling 3/4 full.

7. Bake 18–22 minutes until a toothpick comes out clean.

8. Cool 5 minutes in tin, then transfer to a wire rack.

Notes

Don’t overmix the batter.

For extra flavor, try adding a tablespoon of nut butter.

Store in an airtight container for up to 5 days.
